Sunburst Lemon Bars

The crust is really simple and almost like a sugar cookie. The filling is really light. It’s not as thick as other lemon bars. The glaze on top is a very thin layer, but combined with the soft filling and lemony crust, it was heaven.


2 cups all-purpose flour
1/2 cup powdered sugar
1 cup butter, softened
1 tsp. grated lemon peel

4 eggs
2 cups granulated sugar
1/4 cup all-purpose flour
1 tsp. baking powder
1/4 cup fresh lemon juice
1 tsp. grated lemon peel

1 cup powdered sugar
2 to 3 tablespoons lemon juice
