Cod With Tomato And Herb Butter

1 pint grape or cherry tomatoes
1/2 cup chicken stock
1/2 tsp. sea salt
1/4 tsp. red pepper flakes
1/4 tsp. granulated sugar
4 Tbsp. unsalted butter, sliced
3 Tbsp. fresh chopped herbs (basil, parsley, chives, cilantro), plus extra for garnish

2 – 2 1/4 pounds fresh cod fillets, cut into 6–8 oz. portions*
