Mexican Mango Cake
This is a scrumptious way to use the very versatile Mango. This Bundt cake is sweet, rich and delicious. It is as easy to make as it is to eat.
INGREDIENTS
3 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 sticks butter
2 1/2 cup granulated sugar
6 eggs
2 teaspoons vanilla extract
2/3 cups buttermilk
FOR THE MANGO GLAZE
2 cups mango
2 tablespoons water
1 1/4 cup confectioners sugar
