½ cup pecans, chopped (plus additional for garnish, if desired)
1 cup pumpkin puree
3/4 cup almond milk (OR whole/2% milk), at room temperature
2 eggs, at room temperature
1/4 cup coconut oil, melted and slightly cooled
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
2 cups rolled oats
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon salt
